The national
egg shortage means you may not be able to find eggs on shelves these days, and if you do, they might cost an arm and an leg. It might be time to switch things up and look into some delicious alternatives. Here are seven delicious alternatives to
eggs to help you break out of your egg-eating routine.
1. Eggless Frittata –
This frittata is a great way to get your protein fix without the eggs! The recipe calls for silken tofu, which is blended with nutritional yeast, spices, and vegetables. Once everything is blended together, it’s cooked in a skillet until it’s golden brown and crispy on the outside.
2. Banana Oatmeal Pancakes –
If you’re looking for something sweet in the morning, these banana oatmeal pancakes are sure to hit the spot! This recipe calls for bananas, oats, almond milk, baking powder and cinnamon. Once everything is mixed together, cook them up in a skillet until they’re golden brown on both sides. Serve with your favorite syrup or jam for an extra special treat!
3. Sweet Potato Hash –
For those days when you want something savory but still healthy, try this sweet potato hash! The potatoes are roasted until they’re crispy on the outside and tender on the inside. Then mix in some garlic powder, onion powder, smoked paprika and parsley; cook everything together until it’s all nicely combined and warmed through. Add some avocado slices or a fried egg if desired!
4. Vegan French Toast –
You don’t have to miss out on French toast just because you don’t eat eggs! This vegan version calls for almond milk, cinnamon, vanilla extract and bread of your choice (try using whole wheat or gluten-free). Dip each slice in the batter before cooking it in a skillet until it's golden brown on both sides; serve with maple syrup or your favorite jam to complete the dish!
5. Tofu Scramble –
If you miss having scrambled eggs for breakfast but can't eat them anymore due to dietary restrictions (or just plain don't like them), then try this tofu scramble instead! Start by pressing out as much water from the block of tofu as possible; then crumble it into small pieces before cooking it up with spices such as turmeric for color and nutritional yeast for flavor. Add any vegetables that sound good—mushrooms and bell peppers work particularly well—and enjoy your veggie-filled scramble!
6. Avocado Toast –
Avocado toast has become one of the most popular breakfast options around lately; why not give it a try yourself? Start by mashing an avocado onto two slices of toast; top with salt and pepper if desired before topping with veggies such as tomatoes or sprouts and/or cheese like feta or goat cheese if desired. Finally drizzle over some olive oil before digging in—it's that easy!
7. Our last of the the delicious alternatives to eggs: Acai Bowls –
If you're looking for something light yet filling at breakfast time then acai bowls should do the trick nicely! Start by blending frozen acai berries with almond milk until smooth; pour into a bowl topped with nuts such as almonds or walnuts plus fresh fruit such as strawberries or blueberries plus coconut flakes if desired before digging in with a spoon (or two!).
There are so many delicious alternatives to eggs when it comes to breakfast that there's no reason not to switch things up every now and then! From eggless frittatas to vegan French toast to acai bowls (plus so much more!), there's something here for everyone no matter their dietary needs or preferences — so what are you waiting for? Get cooking (and eating!) today!
